RAISED DONUT BASE for yeast donuts12,5kg
Ingredients: WHEAT flour (with calcium, niacin, iron, thiamin), vegetable oil (rapeseed), sugar, dextrose, raising agents (disodium diphosphate, sodium bicarbonate), emulsifiers (E471, E481, E472e), salt, glucose syrup, whole EGG powder, whey powder (MILK), stabilisers (guar gum, pentasodium triphosphate), MILK protein, flour treatment agent (ascorbic acid), natural flavouring.
Application: 1000g Base, 1000g Strong Bread Flour, 1000g Water, 100g Yeast.
Mix all ingredients together for 2 minutes slow speed and then approximately 8 - 12 minutes on fast speed as required to ensure the dough is well developed. Dough Temperature 26-28°C. Rest the dough for 10 minutes. Shape as required. Prove at 35-40°C and 60-70%. Relative Humidity for up to 50 minutes. Dry for up to 10 minutes before frying. Fry in good quality shortening at 180-190°C for 1 minute each side for ring Donuts, 1.5 to 2 minutes each side for ball donuts.
