RAISED DONUT BASE Mix for cake donuts 25kg
Ingredients: fortified WHEAT flour (WHEAT flour, calcium, niacin, iron, thiamin), sugar, vegetable oil (rapeseed), skimmed MILK powder, EGG yolk powder, SOYA flour, raising agents (disodium diphosphate, sodium bicarbonate), salt, modified starch (WHEAT), emulsifier (SOYA lecithin), natural flavouring, stabiliser (sodium carboxymethyl cellulose), natural lemon flavouring.
Application: 2000g Mix,900g water.
Place dry ingredients in a bowl. Add water slowly over 1 minute on slow speed. Scrape down and mix on medium speed for 2 minutes. Batter temperature 23°C-24°C. Rest for 10 minutes prior to use and then use within 20 minutes. Fry in good quality shortening at 185-190°C for 1 minute each side.
